Situated in 275 acres within Dartmoor National Park, Bovey Castle’s Great Western Restaurant has been awarded three rosettes by the AA for its culinary excellence. Restaurants with the coveted three rosettes are deemed to be outstanding establishments that demand recognition well beyond their local area and just 10% of the AA’s restaurants achieve this level.
The Great Western Restaurant’s talented Head Chef Mark Budd honed his skills at some of the finest hotel restaurants in the world before returning to his home country of Devon. Mark has a passion for provenance and incorporating the best quality local produce into his menus. Mark has adapted the menu to reflect Bovey Castle’s glorious surroundings: the ‘9th Hole Chocolate Tree Stump’ - a marriage of lime, cardamom and milk chocolate - is a nod to the estate’s championship golf course, while the ‘Bovey Meadow’ dessert of cream cheese ice cream, Perry poached pear, bee pollen and honeycomb celebrates Bovey Castle’s beautiful landscape. Mark is also developing a herb garden on the estate and he has also introduced the ‘Big Green Egg’, an outdoor ceramic oven to slow cook dishes such as Old Spot Pork and Crackling. Looking to the future, Mark is working in conjunction with the Bovey Castle estates team to bring Dexter cattle to the estate. His goal is to start putting this pedigree beef, which is favoured by top chefs for its outstanding quality, on the menu.
According to AA Senior Hotel & Restaurant inspector, Garry Baldwin MIH, “The re-invention of the dining options at Bovey Castle, in line with the development of the AA Five Star hotel, now sees the Great Western Restaurant under the direction of Mark Budd. Mark uses the finest ingredients the South West and the UK can offer, ensuring dishes are created with flair and imagination whilst keeping a sense of fun and indeed credibility to the hotel and its surroundings. Congratulations to Mark and the team.”
The Dartmoor country estate has gone from strength to strength since it was acquired by the Eden Hotel Collection in 2014, having undergone an extensive £3.5 million refurbishment encompassing general restoration work throughout, plus considerable work on the spa, brasserie, restaurant, public areas and bedrooms.
The Great Western Restaurant is open from Tuesday to Saturday (7pm-9.30pm) and Sunday (12.30pm-2.00pm). During January and February 2017, enjoy a glass of champagne on arrival and £20 pp off the seven-course tasting menu (usual price £75 pp – offer price £55 pp).
